Quinoa Breakfast

THIS IS ONE OF MY FAVORITE GRAINS.

Ingredients
1 cup quinoa
1 apple, peeled and chopped
1/2 cup dried cranberries
1/2 tsp cinnamon
Optional toppings: yogurt, honey, pecans, bananas, berries, chopped dates, cinnamon sugar.
Instructions
Rinse quinoa and place in pot with 2 cups water.
Bring to a boil, reduce heat and cover. Simmer for 5 minutes.
Uncover and add apple, cranberries and cinnamon.
Continue to simmer uncovered until water is absorbed.
Serve in bowls topped with plain yogurt, honey and fruit. Or pass a selection of toppings.
