Dutch Pancake Recipe

 

The recipe below is a  combination of plums and apples sweetened with a little maple syrup but you can use whatever fruit available. (blueberries & raspberries would be a delicious combination)

Servings: Makes 6-8 servings.  •   Prep: 10 mins  • Total: 25 mins
dutchpancake Ingredients:

4 TBL butter or butter alternative

1 plum, pitted and sliced

1 apple, cored and sliced

1/3 cup sweetener such as maple syrup,
brown sugar or honey

1 tsp cinnamon

2 TBL lemon juice, optional

4
large eggs

1 cup  gluten free baking mix
(similar to Bisquick)

1 cup milk or milk alternative

1 tsp vanilla extract

 Prep:
None
 Directions:Preheat oven to 425.
Lightly spray a oven proof
skillet or a 9x9" baking pan.

Mix it Up

• Melt butter in a large oven
   proof skillet over medium heat.
  Add fruit slices and sweetener,
  cinnamon and lemon.
  Saute for 2-3 minutes until fruit,
  sugar and spices are combined.

• In a medium bowl whisk together
  eggs, milk, vanilla and gluten free
  baking mix

If using an oven proof skillet spread
fruit over bottom and pour mixture over
hot fruit. (If using a 9x9 baking dish,
lightly grease and spread fruit on bottom
and pour batter on top.)

• Bake in oven for 20 minutes until pancake
 is puffed and light brown. Serve warm with
 a dusting of confectioner sugar and/or
 warm maple syrup.
