Cheesy Bean Dip

CHEESY BEAN DIP

This is a great as a dip served with tortilla chips, but is also perfect as a burrito filling. You can make this bean dip meatless or extra meaty, depending on your preference!
Recipe from:
Recipe type: Appetizer
INGREDIENTS
  • 1/2 lb. ground beef (can omit for meatless option)
  • 2 Tbsp. gluten-free taco seasoning
  • 2 cans refried black beans
  • 8 oz. sour cream (use a natural one, like Daisy, and also full-fat is best)
  • 2 tsp. gluten-free taco sauce or salsa (I use Taco Bell Mild Restaurant Sauce)
  • 2 cups shredded Mexican cheese blend (cheddar + jack)
INSTRUCTIONS

  1. In a skillet, cook the ground beef, sprinkled with the taco seasoning, until cooked.
  2. In an ungreased 2-qt. casserole dish, stir together the ground beef and refried beans.
  3. Mix sour cream and taco sauce or salsa together. Spread as a layer on top of the bean/meat mixture
  4. Sprinkle the cheese over the top of all.
  5. Bake at 350, covered for 20 minutes. Remove cover and bake for 15-20 minutes longer, or until bubbly and cheese has browned a bit.
  6. Serve warm.
As always, be sure to double-check all of your ingredients to ensure they are gluten-free.
I don't recommend you use light sour cream in it, it always curdles. Use a good, natural, full-fat sour cream for best results. I always use Daisy sour cream as it doesn't have a bunch of extra stuff added like many of the sour creams out there.
